For those who are not aware:
We are supposed to keep Salad Dressings chilled, but sauces don't need to be

•She would like you guys to put the entrees into each box meal, and then put those box meals in the canvas bags when it gets close to her pick up time, because she won't have time or space to do it after she picks up the order.
•I know you guys already know, but try not to put them in the boxes too early, so they don't lose temperature for a long time.

New backup paper goods bin in van, In case we forget something for a guest's order: forks, spoons, knives, plates, various bags, and 8 oz sauces.
•please replace what you take out, as soon as you get back to the restaurant.

The guest is SUNHA SUNHA. She is requesting our help to take the order to the front office for the Rock Academy, Even though it is a pickup order. I spoke with Alonzo and he said it is fine if we send somebody to help her take the order over there, and we will not be charging her for a delivery order.
She will also need paper goods and a variety of sauces, but I'll put that on the order too.

Hey guys! We have a delivery catering order for Thursday 10-23 at 11:45 a.m. this was the winner of the business card raffle: Point Loma Children's Dentistry
The order says pick up, but this is a DELIVERY order.
They are in the same complex, we can deliver their order with a cart. All of their items are free. Please include a variety of sauces, and don't forget cups!

Hello wonderful team! Catering now has some updated packaging standards !!!PLEASE READ!!!
These changes were requested by Matt and Georgia:
We have had a few oopsies at each store recently where items were forgotten in customers catering orders. In order to avoid this issue in the future, we need our leadership team to highlight all relevant information on BOTH FOH AND BOH receipts, to make it easier to identify and keep track of all items 🫡
1) Instead of putting eating/serving utensils in paper bags, we will now be putting them in the boxes (box meals boxes) for every order.
2) Sauces and dressings will have the same treatment: boxes!
3) Instead of putting entrees in paper bags, we will be putting them directly into the TMS bags using the 2 tier setup if needed.
•(The silver hot plate in the large bags can be set on pegs that are built into the TMS bag, so that there are two levels: a bottom level and a top level. Load the bottom level first, then put the hot plate on top of the pegs, careful not to smush the entrees. This allows us to fit more food, more even heat distribution, and encourages us to display orders properly upon delivery.)
• For pickup orders, once the guest arrives we can transfer the entrees into 25# bags, and then put those into a shopping bag like we used to. We will give the guest their order that way. For sauces and utensils: boxes, no paper bags.
4) For box meals, once we arrive at the delivery location, offer to set up the box meals for them. If they oblige, take the box meals out of the canvas bags, and load each individual sandwich into its box, display boxes neatly.
•If they wish for you to just hand the goods off to them, you can leave the box meals in the canvas bags, and we have paper bags and shopping bags in the van that you can load the sandwiches / entrees into from the TMS bag, and hand off that way (similar to the old standard).
• For non box meal orders: IF YOU USE YOUR PERSONAL VEHICLE FOR DELIVERY, PLEASE MAKE SURE TO BRING A FEW EXTRA 25 LB BAGS AND SHOPPING BAGS IN CASE THE CUSTOMER DOES NOT WANT YOU TO ENTER THEIR BUILDING AND DISPLAY THE ORDER FOR THEM We can still use the plastic tray bags for all orders that have trays.
5) For all chilled items , we must have a chilled TMS bag prepared, and insulate food items with ice packs, which can be found in the freezer underneath the food storage shelves. If we run out of TMS bags for high volume orders, we may use shopping bags as a last resort, but the food must be kept within proper temperature ranges.
REMEMBER TO BRING EXTRA SHOPPING BAGS FOR TRANSFER IN CASE YOU CANNOT ENTER THE GUEST'S BUILDING
TWO EXCEPTIONS: GATE GOURMET / AIRPORT AUTHORITY
Based on the nature of our charter orders through Gate Gourmet, and the Airport Authority, we can still use paper bags / the old standard for their orders.
Kitchen will need to order at least one extra case of box meal boxes to keep on hand for the new standard

Marc Sawyer will be placing a pickup order for 9-20, he will be taking the TMS bags with him. However, we need the person that is picking up the order to sign this contract when they arrive. <@U08G69U0X6Y> I already prepped the paper goods for both of the afternoon catering orders. One of them is in the back on the catering station, the other paper goods are in the walk-in cooler so that the salad dressing stay cool.
