I second everything above, especially the use of Screaming Frog.

Map out all of your redirects ahead of time so you can check them off one by one.

And avoid redirect chains by redirecting each page individually (rather than redirecting a redirected page, which can take a toll on your CWV scores and hurt your traffic).

@Theresa H It depends on the gig you're applying for. Content agencies will understand the value of podcasting experience. If you're working directly for a non-marketing expert, you might have to provide some context around E-E-A-T and why interviews are necessary to the content creation process.

My advice to freelance bloggers right now is to get good at interviewing. A lot of experts don't have the time or skill to write about the topic they're an expert in. They'll need writers to be microphones for them.
